Day 22: Bosnia & Herzegovina and đuveč

Good evening, Raffies!

Today I am writing to you with a dripping nose and a heavy head…yes, I have managed to get a nice cold during my weekend in Italy..

Tonight we are going to the Balkans and in Particular to Bosnia and Herzegovina. We are going to prepare đuveč. This dish caught my attention, because it was so colourful. Much to soothe my cold, this dish was so warm and awesome, a real cure-all..Lovely! Strangely enough, comparing my version with the photos on the internet, my đuveč turned out a lot less red…should I have added some tomato paste?

If you want to try this at home, I have used this recipe among others.


300 g beef or pork

50 g bacon

75 g dried sausages

1 onion

1 handful rice

2 potatoes

1 bunch fresh parsley








500 g mixed vegetables, like aubergines, zucchini, carrots, green beans, peppers, tomatoes

Dice the meat and cut the bacon into strips, Slice the sausage. Chop the onions and the vegetables. Peel and dice the potatoes.

Heat the oil in a large skillet and fry the onions, bacon and sausage. Add the meat and 1 cup of water. Season with paprika, pepper, salt  and the herbs.

Cook for 5 to 10 minutes on medium heat. Now add the potatoes and rice. If needed, add some more water.

Add the vegetables and pour in more water. Cover with a lid and cook for approximately 20-30 minutes.

Alternatively, you can cover it with a lid and bake it for 30 minutes at 180º in the oven. Then remove the lid and bake for 15 more minutes.

Serve warm.

Are you more of a soup person or a stew person? Personally, I do not love soups too much and prefer some consistency in my food…(might be a consequence of 10 years of retainers and brackets..)
