Day 77: Iceland and Pylsur

Today we are going to Iceland!
One of the most common dishes is Pylsur, which is basically a hot-dog, but an Icelandic one.
I decided to skip the rotten shark, hákarl, the roasted sheep skull, svið, or some nice puffin, lundi – mostly because I am unable to come by those ingredients. During my trip to Iceland, I had tried the rotten shark, which was weird, and the puffin, which made me feel guilty, even though it was delicious.
Well, pylsur is a dish you can find everywhere in Iceland. And since we are in our food challenge, we are not going for the bought sausage, but we made it from scratch, thanks to this awesome recipe!

Together with the sausage and the bun, I made a remoulade, some honey-mustard sauce and homemade ketchup.
It was amazing! And it reminded me of my trip to Iceland. The only time in my life, I was lucky enough to see the Northern lights.


250 g ground beef

250 g ground pork

250 g ground lamb

50 g fresh thyme

1 tsp salt


Fried onions

Gherkins, sliced

Onion, sliced or thinly diced

For the Pylsussinep:

1/4 cup beer

1/2 cup mustard

2 tbsp white wine vinegar

1 clove of garlic, minced

2 tbsp honey

1 tbsp ketchup


For the Remoulade:

3/4 cup olive oil

1 yolk

1 tbsp Dijon mustard

1 tbsp white wine vinegar

1 tbsp gherkins, minced

1 tbsp capers, minced

1 tsp tarragon, chopped

1 tsp chives,  chopped

Mix the the meats together in a bowl. Add the thyme and the sea salt to the mixture. Take out some meat skewers and form sausage shapes around the skewers.

If you do not own skewers, you can form sausage shapes and grill them or fry them in a pan.

Cook the meat on a barbecue or in a frying pan or even in the oven.

In the meantime, make the sauces. For the remoulade, mix the mustard with the yolk. Gradually add the olive oil and mix well. The oil should get thick and dense. Now add the gherkins, capers, chives, tarragon and white wine vinegar. Mix until the sauce is thick.

Next, make the Pylsussinep by mixing mustard* and beer. Add vinegar, garlic, honey, ketchup and salt, mix well and refrigerate.

Now it is time to put your hot dogs together.

  • If you can find mustard powder, use this instead.
