Focaccia di Patate – Italian Potato Focaccia

Welcome back to my little corner of the internet!

Today we are going to make my favourite type of focaccia! The recipe is really simple and the result is an addictive piece of heaven. Ready? Let’s go!


300g flour

200g potatoes

1 pckg yeast

20g extra virgin olive oil


145g water

1 tsp sugar

Extra virgin olive oil for garnish

Sea salt flakes for garnish

Rosemary for garnish

Start by peeling the potatoes and boiling them in salted water until soft. If you cut them into chunks, the time is reduced and it will take them only 10-15 minutes to be done.
Once the potatoes are soft, drain them and let them cool a bit. Crush or mash your potatoes.

In a bowl, pour the flour, the yeast, the salt, the sugar and the mashed potatoes. Add the oil and mix it well. You can use a wooden spoon, if you do not want to use your hands. Gradually add the water and work into a nice dough.

The dough will be quite sticky, but it is supposed to be like that. Put it into an oiled bowl and form it into a ball. Cover with some clear foil and wait until it will have grown to twice the size.

Now take your dough and spread it out on a baking tray or pie form using your fingers. It should have the dents of where your fingers pressed down. Brush with olive oil, drizzle some salt and rosemary and bake in the oven at 200º C  (392ºF) for 20 minutes. Serve either hot or cold.

You can also use cherry tomatoes, olives, artichokes, etc to garnish your focaccia.
