Caribbean Chicken Curry and Roti

When I was still living in the Netherlands, I enjoyed the Surinamese cuisine, its curry with potatoes, green bean and chicken and its lovely roti.

So, being confined at home, I decided to give it a go at home.


1 Chicken breast, cut into chunks

4 Potatoes, peeled and cut into chunks

150 g Green beans

1 Onion, chopped

2 Cloves of garlic, minced

1 Tomato, chopped

2 Eggs, hard boiled and peeled

250 ml Water

2 tbsp Curry mix (curcuma, coriander, cumin, ginger, chili)

1 tsp Thyme

1 Bouillon cube



Vegetable oil

In a large skillet, fry the onion, the garlic and the chicken in vegetable oil. Once the chicken is not pink anymore, add the spices and the bouillon cube.
Add the tomato and the water.
Bring to a boil and add the potatoes. Cover with a lid and cook at a medium-low heat for about 30 minutes, or until the potatoes are soft.
Now add the green beans and the eggs to the mixture and cook for another 10 minutes.
Serve with roti or with rice.
If you want to make your own roti, you can do so while the curry is cooking.
Ingredients for the Roti wraps:
500 g Flour
1 tbsp Baking Powder
1 tsp Salt
50 g Butter
Water, enough for a smooth dough
In a bowl, mix flour, salt and baking powder. Now start gradually adding water to the dough until you can mix it into a smooth dough. Shape into a ball and cover with a cloth and leave to rest for about 10-15 minutes.

Cut the dough into smaller portions. I make 4 or 6, depending on the size of the pan I will be using to fry the roti in. Roll the dough out into a disc of a about 3 mm.

Heat up a pan and grease with some butter or ghee. Fry the dough for 1 minute, flip over and fry until dark spots appear. Brush the pan with butter every time you flip the dough over.

Repeat until all your rotis are done.

Now for serving, you can make a wrap or burrito by using the roti and placing the filling inside. Otherwise, you can use the roti as a bread to dip in the curry.
